This is a variation on homemade 'eatmore' bars.
The original recipe calls for 2-3 cups of chopped peanuts only, but you can substitute with your favorite nuts.
For the base:
Melt 1 package (approx. 300 grams) of semi-sweet chocolate chips and 1 cup liquid honey in a large saucepan over medium heat. Once melted add 1/2 cup of peanut butter. Bring the mixture to a boil for 3-5 minutes and remove from heat.
2-3 cups chopped almonds (or chopped nuts of your choice)
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
Pour into a 7" x 11" greased pan and let cool completely before cutting into 1/2" x 1" pieces. Makes 154 pieces. These freeze well.
Note: Add ins should equal 3 to 3 1/2 cups. Try experimenting with a variety of your favorite nuts, seeds, oatmeal, and dried fruit.
