
These roasted almonds make a delicious snack and are almost addictive. But they are so good for you!
2 cups natural whole almonds, skins on
3 tablespoons tamari
1 1⁄2 tablespoons olive oil
1⁄4 teaspoon cayenne pepper
3⁄4 teaspoon sea salt
Mix tamari, vegetable oil, cayenne pepper, and salt in the bottom of a 9” x 13” baking pan. When well mixed add the almonds and stir well to coat them evenly. Let this marinate for 1 hour, stirring once or twice to re-distribute the sauce.
Pre-heat oven to 300 degrees F.
Bake for 15 minutes. Stir well and continue cooking for 5 minutes. Stir again and continue cooking for another 5 minutes. Watch carefully at this stage. They are done when there is very little runny sauce left in the bottom of the baking pan.
Pour out the almonds onto a large plate to cool. If there is a teaspoon or so of runny sauce in the bottom of the pan, drizzle that over top of the almonds. Let cool before eating.
**Note: I use extra virgin olive oil as the cooking oil for these almonds. If you don't enjoy its bold flavor you may want to use a milder tasting oil.
